Tomato, Eggplant and Malunggay Pasta Sauce

Any family with a toddler can relate to this – teething means meal refusal at times. Amanda’s cuspids started to erupt last week and she began to refuse foods, except for bread and yogurt.

It’s been days that she’s refusing whatever I cook for her. I am starting to worry, but this mama has to do something! That is, I have to be patient and keep on offering her healthy food.

This week, success rate seems to be going up! Thanks to pasta and this vegetarian sauce.

Here’s the recipe.

Ingredients:

  • 5 tomatoes
  • 1 eggplant
  • 1/4 cup malunggay leaves
  • (Optional) salt and pepper

How to do it:

  1. Boil tomatoes until soft. Remove seeds and skin. Blend until smooth.
  2. In a skillet, sauté eggplant slices.
  3. Add in the tomato mixture. Add salt and pepper (optional). Let it simmer.
  4. Sprinkle with chopped malunggay leaves.

Served with pinritong saging na saba on the side.

The tomato is sweet, and our toddler loves it! The eggplant gives the “meaty” taste of the sauce. The malunggay added a healthy punch to this dish.

Aside from making pasta sauces, I am also stocking up on frozen fruits to help with our toddler’s teething pain. We’re keeping a relaxed and fun environment as well during mealtimes and I’m just hoping Amanda’s appetite will return sooner.
